Why does the crust flake apart. The crust bubbles up.

Hi Scott, Our crust is designed to do that. The bottom layers ensures that the crust will be nice a crispy, while the top layer stays soft to protect the bottoms from the sauces and topping soaking through. We recommend poking the bubbles as you see them throughout the baking process.
